Double Fudge Chocolate Cake
Serve when
"This could be the best cake I ever made" — and then she's already handing you a slice.
In the movie
Theatrical
- ~01:14:00 Jane finishes icing the cake on her kitchen counter while checking the roast chicken in the oven — the last piece of "your favorite dinner, Jakey"
- ~01:24:30 Days later, Jane answers her door mid-bite, eating a gi-normous slice of the same cake straight off the plate, and declares it might be the best she's ever made
The cake is the other half of Jane's reconciliation dinner for Jake — she's icing it in the same scene where the chicken comes out of the oven, and it gets its own callback days later when Jane answers her door mid-bite, eating what the script calls a "gi-normous piece of cake," and can't help declaring it might be the best one she's ever made. It's a small, telling detail about Jane: her baking gets noticeably more ambitious the happier and more reckless she is that week.
Ingredients
- For the cake:
- For the fudge frosting:
Method
- Whisk the flour, cocoa, baking soda, and salt together. In a separate bowl, whisk the sugar, eggs, buttermilk, oil, and vanilla until smooth.
- Combine the wet and dry ingredients, then stir in the hot coffee last — the batter will be thin, which is right.
- Divide between two greased and parchment-lined 9-inch cake pans. Bake at 350°F for 30–35 minutes, until a toothpick comes out clean. Cool completely in the pans before turning out.
- For the frosting, beat the butter until fluffy, then beat in the cocoa powder. Add the powdered sugar alternately with the cream, beating until smooth, then add vanilla and salt.
- Level the cakes if needed, fill and stack the layers with frosting, then frost the whole cake generously, top and sides.
- Cut generously. This cake is meant to be eaten in gi-normous slices.
