Jane's Three Pies: Apple, Blueberry & Plum

Jane shows up to a friends' gathering with all three pies stacked in her arms, and the reaction — "Three pies?! This is a feast!" — is really about what the pies signal: she's been baking nonstop, riding an energy she can't quite explain yet, and the pies are the setup for the scene where she tells her friends why. It's the film's one moment of pure excess in the kitchen, three whole pies for an evening of wine and gossip, and it works because it's clearly more than anyone needed.

Method
- For each crust, pulse the flour, salt, and sugar together, then cut in the cold butter until it's pea-sized. Add ice water a tablespoon at a time until the dough just holds together. Divide in two, flatten into discs, and chill at least an hour.
- For each filling, toss the fruit with its sugar, thickener, spice, and lemon juice (as listed) and let it sit 15 minutes to draw out some juice.
- Roll out a bottom crust for each pie and fit it into a 9-inch pie dish. Fill with the corresponding fruit mixture.
- Roll out the top crusts — lattice, full round with vents, or a mix — and seal the edges of each pie.
- Bake all three at 375°F for 45–55 minutes, until the crusts are deep golden and the fillings bubble visibly through the vents. Tent with foil partway through if the crust is browning too fast.
- Cool at least 2 hours before slicing so the fillings set.
Substitutions
- Butter crust: a half-butter, half-shortening crust holds its shape a little better for transport, if you're carrying all three across town like Jane does.
