Jane treats this ice cream as her own private remedy — she tells Adam she makes it whenever she can't sleep, and it turns up twice in one night: first as the dessert that closes out her tentative dinner with Adam, then a few hours later as the bowl Jake polishes off while sitting on her bathroom floor, insisting it's "incredible" between confessions about his marriage. Both men end up eating the same batch, which is very much the film's sense of humor about Jane's love life that week.

Method
- Warm the cream, milk, and lavender together until just steaming, then remove from heat, cover, and let steep for 20 minutes. Strain out the lavender.
- Whisk the honey, egg yolks, and salt together. Slowly whisk in the warm cream mixture to temper the yolks.
- Return everything to the pan and cook over low heat, stirring constantly, until the custard coats the back of a spoon and a finger drawn through it leaves a clean line — about 170°F; never let it simmer or the yolks will curdle.
- Strain into a bowl set over ice, and chill thoroughly, at least 4 hours or overnight.
- Churn in an ice cream maker according to its instructions, then freeze until firm, about 4 more hours.
Substitutions
- Culinary lavender: don't substitute lavender from a garden-supply or bath-and-body source — use lavender labeled for cooking, since ornamental varieties can carry pesticide residue and taste soapy in larger amounts.
