Konpeitō is the smallest food in the film and one of the most memorable — a fistful of star-shaped sugar tossed to the soot sprites as thanks for hauling coal. It's a wordless transaction that says everything about how the bathhouse runs: work gets rewarded, even down at the bottom of the workforce, in the form of a treat that costs almost nothing and means a great deal.
Ingredients
Method
- Combine sugar, water, and rice vinegar in a small pot and cook to 293°F (the hard crack stage), without stirring once it starts to boil.
- Pour a thin layer into a heated, rimmed pan or a rotating drum if you have one; drop in a few tiny seed crystals of coarse sugar to start the knobbly growth.
- Keep the syrup warm and, over several hours, ladle on a few more drops at a time, tumbling the seeds so sugar builds up unevenly around each one — this is what makes the little bumps. Tint separate small batches in pastel colors.
- Let the candies dry and harden for a day before handling — real konpeitō is a days-long process, and rushing it collapses the shape.
- Serve loose, in a paper cone or scattered by the handful. It isn't meant to be plated.
Substitutions
- The days-long tumbling process: this is genuinely a specialty confectioner's craft (Japan's Ryokujuan Shimizu has made konpeitō since 1847). A faithful home version is a multi-day project; if you want the candy without the process, buy it — most Japanese grocers and importers carry real konpeitō in small jars.
