Lin's Steamed Red Bean Bun
Serve when
Serve it on a balcony at night, split between friends — Lin's smuggled treat, eaten looking out over water.
In the movie
Theatrical
- After the flood of rain turns the tracks to sea, Lin brings Sen a steamed bun snagged from the bathhouse festivities, and they eat together on the balcony over the water — the film's quietest kindness.
Lin's bun is friendship in food form — the tough senpai quietly feeding the new kid. The balcony scene says everything without dialogue: hot bun, night air, the flooded world gone calm.
Ingredients
- For the dough:
Method
- Knead the dough ingredients smooth; rise 1 hour until doubled.
- Divide into 8; roll each into a disc thicker at the center.
- Wrap each around a spoonful of anko and pinch closed; rest seam-down on parchment squares, 20 minutes.
- Steam over simmering water 12 minutes, until puffed and springy to a light touch; rest 3 before lifting the lid so the buns don't deflate.
- Eat warm, ideally two of you, ideally somewhere high with a view.
Substitutions
- Red bean paste (anko): store-bought is the best practical option — canned or tubed, smooth (koshian) or chunky (tsubuan). No anko? Sweetened black sesame paste or a thick vanilla custard both make a lovely filling, if less traditional.
