- Cut the russets into ¼-inch batons; soak in cold water 30 minutes to shed starch.
- Dry completely. First fry at 325°F for 3–4 minutes until cooked through but pale; drain and rest 15 minutes.
- Second fry at 375°F for 2–3 minutes until deep gold and rigid.
- Salt immediately and generously, shaking in a paper bag if you want the full effect.
