Before the vol-au-vent, before the turbot, before any of the meal's richer pleasures, the consommé makes the film's quiet argument: that clarity is harder than abundance. It's a dish with nowhere to hide — one cloudy misstep and the whole thing is ruined — and Eugénie makes it look like breathing. "Nothing but sweet," someone says, and that's the point: hours of work distilled into something that tastes like almost nothing at all, and like everything.

Method
- Make sure your stock is well chilled and as fat-free as you can get it — skim it cold.
- Build the raft: whisk the egg whites to loose foam, then stir in the minced shellfish or meat, the minced vegetables, and the chopped tomato.
- Whisk the raft thoroughly into the cold stock, then set over low heat. Stir gently only until it's warm — then stop touching it. As it heats, the raft rises and knits into a grey crust that traps every particle, leaving the broth beneath it glass-clear.
- Once the raft has formed, keep the barest simmer for 45 minutes. Ladle the clear consommé out through a hole in the raft — never pour — and strain it through a cloth-lined sieve.
- Season with a little salt (it needs almost nothing). Serve piping hot in warmed cups with a few threads of julienned vegetable or a picked crayfish tail suspended in it.
Substitutions
- Crayfish: hard to find live; the shells of shrimp or langoustine make an equally sweet shellfish stock, and a good chicken stock gives you an honest, clear consommé too.
