It's a small, glamorous beat in an otherwise brutal opening service — the front of house sending out something bright and celebratory to a VIP table while the kitchen behind the pass is barely holding together. The daiquiri is doing exactly what a good front-of-house program is supposed to do: keep the dining room's mood a full register calmer than the kitchen's.

- Blend the rum, lime juice, simple syrup, strawberries, and a generous cup of ice until completely smooth.
