Food Notes
The bouillabaisse that never made it to screen. Chef consultant Ellis Barrie developed a bouillabaisse sequence he wanted to be a signature TV moment for Stephen Graham's character, but the scene was never filmed after a fish allergy on set got in the way. It's a real dish that was designed for the show and simply never appears — a Food Note, not a Recipe, for exactly that reason.
A lot of the pass is single-word shorthand. Point North's service callouts name dozens of proteins across the season — cod, salmon, duck, mackerel, oysters, beef, pork, trout, sweetbread, mushroom terrine, gnocchi — usually as one word shouted across a ticket rail. The show is accurately depicting how a real kitchen talks, but most of these never get enough on-screen detail (a plating, a sauce, an actual composed dish) to reconstruct honestly. The recipes on this page stick to the handful of dishes the show actually shows in enough detail to rebuild.
Family meal is a plain pizza, and that's the point. Late in the season the kitchen eats a simple mozzarella-and-basil pizza — deliberately unfussy food, cooked for the crew rather than a paying table. It's a nice contrast beat rather than a dish worth its own recipe page.
The wedding cake and the peppery crackers stay unnamed. Point North's first wedding closes with a cake the show lingers on visually but never names or describes beyond "beautiful," and guests separately ask the kitchen for "peppery crackers" as a snack. Both are real on-screen food beats, but neither carries enough detail to reconstruct as a specific dish.
Ellis Barrie, who consulted on the 2021 film, came back for the series. He wrote the menus and specs, worked out what should be in season for the storylines, and coached the cast on how to move and talk like working chefs — the reason Point North's kitchen choreography reads as authentic rather than performed.
