This dish is the whole engine of the season's back half: a menu Carly designs from scratch, tests under pressure in a la carte service, and then has to deliver at scale — 49 portions in a single seating — for Point North's first wedding. Watching it survive a botched remake in episode three and come out the other side as the wedding's headline course in episode four is the show's clearest argument that a kitchen's real skill is consistency, not just a single good plate.

Method
- For the tabbouleh, soak the bulgur in the boiling water until tender, about 20 minutes, then drain any excess liquid. Toss with the parsley, mint, tomato, olive oil, and lemon juice. Season and chill until service.
- For the emulsion, whisk the egg yolk with the Dijon, then drizzle in the oil very slowly, whisking constantly, to build a thick mayonnaise. Fold through the chopped preserved lemon rind and season to taste.
- Season the hogget well. Sear in hot olive oil with rosemary and garlic until deeply browned outside and rosy pink at the center — 130 to 135 F for medium-rare — about 3 to 4 minutes a side depending on thickness. Rest for 5 minutes.
- Slice the hogget and plate over a bed of tabbouleh, finishing with a spoon of the preserved lemon emulsion.
Substitutions
- Hogget: Hogget — a sheep between one and two years old, between lamb and mutton — is a UK butcher's term and can be hard to find outside Britain. A well-marbled lamb loin is the direct substitute and needs no adjustment to the method.
- Preserved lemons: If you can't find jarred preserved lemons, simmer lemon wedges in a strong salt-sugar brine for 20 minutes as a same-night stand-in — it won't have the full fermented depth, but it gets close.
