The golem field is pure Senshi: dungeon systems understood well enough to become dinner. This stew should taste like that confidence, not like a gimmick.
Ingredients
Method
- Heat the oil in a Dutch oven. Brown the chicken lightly, then remove it to a plate.
- Add the onion, carrots, and potatoes. Cook for 5 minutes, scraping up the browned bits.
- Return the chicken to the pot. Add the cabbage, stock, bay leaf, and soy sauce. Cover and simmer until the vegetables are tender, about 25 minutes.
- Ladle a little hot broth into a bowl and whisk in the miso. Stir the loosened miso back into the pot, then add the butter.
- Taste for salt and black pepper. Serve with rice or bread.
Substitutions
- Golem-field vegetables: Use ordinary cabbage, carrots, potatoes, and onion. The joke is that they are dungeon-grown; the eating experience should be sturdy vegetable stew.
- Chicken: Use firm tofu, mushrooms, or white beans for a vegetarian version. Add them after the potatoes are nearly tender so they do not fall apart.
- White miso: Yellow miso works. If you cannot find miso, add a splash more soy sauce and a little cream or butter for body, though the flavor will be less Japanese.
- Stock: Chicken stock gives the clearest comfort-food profile. Vegetable stock works well if you increase the miso slightly.
