The first hot pot is the thesis statement: monster food stops being a gag and becomes survival craft. For a viewing party, shrimp and mushrooms make the point clearly without turning dinner into a dare.

Method
- Combine the dashi, soy sauce, mirin, sake, ginger, and garlic in a wide pot. Bring it to a simmer and taste for salt. It should be savory but not aggressive because the broth will reduce as people eat.
- Arrange the shrimp, mushrooms, tofu, cabbage, carrots, scallions, and noodles on platters so the table can cook in rounds.
- Add the mushrooms, cabbage, carrots, and tofu first. Simmer until the vegetables are tender, about 5 minutes.
- Add the shrimp and noodles. Cook until the shrimp curl and turn opaque, about 3 minutes more.
- Serve in bowls with lemon and shichimi. Keep adding ingredients as the pot empties, topping up with water or stock if the broth gets too strong.
Substitutions
- Huge scorpion: Use large shell-on shrimp. The shape gives the same segmented, armored joke at the table, while the shells deepen the broth. Peeled shrimp are easier for guests, but add them later so they do not overcook.
- Walking mushrooms: King oyster mushrooms are the best stand-in because they have thick stems and a springy bite. Shiitake adds aroma. Cremini is the easy supermarket backstop.
- Dashi: Instant dashi is fine here. If you need a non-fish option, use kombu dashi or low-sodium vegetable stock with a small spoon of white miso.
- Mirin and sake: If you do not keep them around, use 2 tablespoons rice vinegar plus 1 tablespoon sugar for the mirin's sweet edge, and water or stock for the sake.
