Egg tofu is a quiet dish for a quiet friendship: Taizo, growing up in his gambler father's shadow, and Midori, working nights at a hostess bar, find each other over the one food they both loved as kids. It isn't a showy plate — it's the kind of thing you order because it tastes like being looked after.

Method
- Whisk the eggs gently, avoiding too much foam, then whisk in the cooled dashi, soy sauce, and salt.
- Strain the mixture through a fine sieve into a heatproof container or loaf pan to remove any stray egg strands.
- Cover tightly and steam over low heat for about 20 minutes, until just set with a slight wobble in the center — don't let it boil, or the custard turns porous.
- Chill completely, then slice into blocks.
- Warm the sauce ingredients together briefly, cool, and spoon over the chilled tofu with a small mound of grated ginger.
Substitutions
- Dashi: A quick dashi from kombu and bonito flakes, or a good instant dashi powder, both work fine here — the custard is delicate enough that a heavy stock will overpower it.
