Recipes

Cook-Along · Episode-by-episode hosting cues

Each dish shows when to start cooking and which episode moment to serve with in Midnight Diner: Tokyo Stories. Use the episode anchor first; timestamps are only shown when the recipe has one.

Season 1

Tan-Men

S1E1 · 00:02:43·Start before the episode

Have the broth simmering and vegetables stir-fried before the opening narration ends, so the noodles only need a last-minute boil.

PrepMake the clear broth and stir-fry the vegetables ahead; fresh ramen noodles boil in under two minutes right before serving.

Omurice

S1E4 · ~00:05:30·Start ~0:20

Fold the omelet open over the rice right as Amamiya and Yoona's bowls arrive — the reveal is the whole point of the dish.

PrepCook the chicken rice ahead and keep it warm; the omelet itself only takes a few minutes right before serving.

Season 2

Sweet Rolled Omelet (Tamagoyaki)

S2E9 · ~00:14:20·Start ~0:10

Roll the last layer of egg together right as the standoff between the two crews resolves into farce — the tamagoyaki is what breaks the tension.

PrepWhisk the egg mixture ahead; the rolling itself only takes a few minutes over the stove.

Toshikoshi Soba

S2E10 · ~00:22:40·Start before the episode

Serve right as midnight hits in the episode's closing scene — the soba is meant to be eaten as the new year turns over.

PrepMake the noodle broth ahead of time and keep it hot; the soba itself boils in a couple of minutes.

Food Notes

Every episode is built around a customer's regular order. The show's whole structure comes from Master's one-line menu policy: he only cooks what's on the wall (a short, fixed list), but he'll make anything a regular asks for if he has the ingredients. That's the premise behind every dish above — they're all "off menu" requests.

Season 1 (2016) and Season 2 (2019) continue the original Japanese TV Tokyo run. This Netflix-produced pair of ten-episode seasons picks up the numbering from the original Shinya Shokudo series (2009–2014), which is why some episode indexes still list them as "season 4" and "season 5" of the franchise. For our purposes here, they're seasons 1 and 2 of the Netflix title.

"New Year's Eve Noodles, Again" (S1E10) is a clip-and-callback episode. It revisits earlier stories in flashback before landing on Master's own New Year's soba service, which is why it isn't catalogued here as its own dish — the soba itself gets its full recipe treatment via the Season 2 finale instead.

Not every dish on screen gets a recipe. A handful of orders are named only once in passing dialogue — a regular's aside about a dish they had "last week," never shown being cooked or eaten on screen — and stay here as background rather than becoming their own Recipe, per the anchor rule.
