Two friends chasing the same acting dream keep ordering the same bowl on the strength of an online rumor that it grants a wish. When only one of their luck actually turns, the udon becomes a small, painful marker of how competitive their industry really is.

Method
- Pour boiling water over the aburaage to remove excess oil, then simmer it in the dashi, soy sauce, mirin, and sugar until it's absorbed most of the liquid and turned deep golden. Set aside.
- Bring the soup dashi to a simmer with soy sauce, mirin, and salt.
- Cook the udon noodles according to the package, then drain and divide into a bowl.
- Ladle the hot broth over the noodles.
- Top with the seasoned aburaage, narutomaki if using, and scallions.
Substitutions
- Aburaage: Look for it in the refrigerated or frozen section of a Japanese or Asian grocer — there isn't a good substitute, since the seasoned pouch is the whole point of the dish.
