A whole roasted king crab is Master's Christmas Eve gesture after forgiving a woman who once wronged him — an uncharacteristically lavish spread from a man whose diner otherwise runs on small, humble dishes. The scale of the crab is the point: it's how he says the grudge is actually over.

Method
- Preheat the oven to 425°F (220°C) or heat a grill to medium-high.
- Use kitchen shears to split the crab shells lengthwise, exposing the meat, which helps it cook evenly and makes it easier to eat.
- Brush the exposed meat with melted butter.
- Roast or grill until the meat is opaque and hot through, about 10 to 12 minutes, brushing with more butter halfway.
- Serve whole on a platter with ponzu and grated daikon for dipping.
Substitutions
- King crab legs: Snow crab legs are more affordable and cook the same way, though the meat is thinner and sweeter rather than the king crab's dense, briny bite.
